- A handful of ice cubes
- 1 lemon wheel and a mint sprig, to garnish
Method
- Fill a tall glass to the top with ice.
- Pour in the blue curaçao syrup and the lemon juice.
- Top up slowly with the chilled soda.
- Stir gently once or twice so the colour evens out without losing the fizz.
- Garnish with a lemon wheel and a mint sprig and serve straight away.
That's it. The balance to aim for is roughly 2 parts syrup to 1 part lemon, then soda to taste. If your soda is already sweet (like Sprite or 7UP), you can cut the syrup down a little.
Tips for a better Blue Lagoon
- Chill everything. Cold soda keeps its fizz longer and the ice melts slower, so the drink doesn't get watery.
- Use fresh lemon. Bottled lemon juice tastes flat. Half a fresh lemon makes a noticeable difference.
- Pour soda last and slowly. Tilting the glass while pouring keeps more of the bubbles.
- Try a sugar rim. Run a lemon wedge around the rim and dip it in sugar for that café look.
